    One of our greatest passions at Guardswell is showcasing truly wonderful food, that has been grown or produced in the most ethical, sustainable, considered, high welfare way - and the magnificent people who produce it, as well as those who cook with it. In 2018 we launched our “Locavore” suppers- a series of dinners at which different chefs or restaurants cooked, show-casing the best in local producers- and the opportunity for those producers to stand up and tell a little of their story.


    The Wilder Kitchen

    My name is William and I'm from the Brecon Beacons in South Wales. I run a project called The Wilder Kitchen and the Wild Kabn Kitchen and with my culinary experiences from around the world, I am constantly exploring the connection between food, fire, and nature with an ethos of supporting small, local businesses and suppliers. Sustainability is at the heart of his project and what I do and my dishes inspire a healthier mindset toward food and the process behind it.

    The experiences I have created, which have taken place throughout the Outer Hebrides, Finland, Wales and now here at Ardkinglas Estate in Argyll, have revolved around the ingredients I can source locally, inspiring a mindset that aligns with the wild and natural surroundings we find ourselves in - creating a mindset that celebrates sustainability and the pleasures of cooking and eating outside.

    We care deeply where our produce comes from and we have recently taken over a large polytunnel here in Argyll - This way we can ensure that we a producing menus that are as close to 100% organic as possible and not only this, but to ensure that it resonates in our personal lives too.

    Fire cooking - Both projects I run revolve around open fire cooking and I refrain from going down the conventional route of grilling large amounts of meat. I'm trying to merge an element of fine dining and rustic cuisines together to create a dining experience that is unique to myself and the land around me. I have an Argentinian hanging frame and I usually set this up wherever I cook!








    We will endeavour to ensure that dietary and allergy requirements are catered to during our Locavore events - but we ask that you first check, to ensure that this is possible, before purchasing a ticket.
